Saucy Shrimp a la Diabla
What you need
1 can (8 oz.) tomato sauce
7 arbol chiles, stemmed
2 tablespoons A.1. Original Steak Sauce
2 tablespoons oil, divided
10 cloves garlic, minced
1 large onion, chopped
2 lbs. uncooked deveined peeled large shrimp
4 cups hot cooked rice
2 green onions, chopped
1/2 cup sour cream
Make It
Blend first three ingredients in blender until smooth.
Heat 1 tablespoon oil in large skillet on medium heat. Add garlic and onions; cook five minutes or until tender. Remove from skillet. heat remaining oil in skill on medium-high heat. Add shrimp, in two batches; cook and stir three minutes or until pink. Remove from skillet; cover to keep warm. Return garlic, onions and shrimp to skillet; stir in sauce mixture. Bring to boil; simmer on low heat three minutes or until heated through.
Spoon over rice; serve topped with onions and sour cream.

Sopapillas
What you need
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
2/3 cup water
Oil for deep-fat frying
Honey
Make It
In a small bowl, combine the dry ingredients; cut in shortening until crumbly. Gradually add water, tossing with a fork until mixture holds together.
On a lightly floured surface, knead dough for 1-2 minutes or until smooth. Cover and let stand for five minutes. Roll out to 1/4 inch thickness. Cut with a 2 1/2 inch star cookie cutter or into 2 1/2 inch triangles.
In an electric skillet or deep fat fryer, heat oil to 375 degrees. Fry sopapillas for 1-2 minutes on each side or until golden brown and puffed. Drain on paper towels. Serve immediately with honey.

Spicy Bean Quesadillas
What you need
2 oz. cheddar cheese
24 Triscuit crackers
1/4 cup refried beans
1/4 cup medium salsa
Make It
Cut cheese into six slices; cut each slice crosswise in half. Top 12 crackers with beans, cheese and salsa. Cover with remaining crackers to make 12 sandwiches.
Place six cracker sandwiches on microwaveable plate. Microwave on high 10-15 seconds or until cheese is melted. Repeat with remaining sandwiches.
