Desserts Dad Will Love

Bring a sweet finish to Father's Day with these tasty desserts that Dad is sure to love! After a day of fun activities and homemade gifts, these desserts will definitely be the icing on the cake!

cakeChocolate, Banana and Graham Cracker Icebox Cake

What you need

15 ounces milk chocolate, chopped

5 large egg yolks

Salt

3 cups heavy cream

20 graham cracker sheets

4 or 5 ripe bananas, thinly sliced lengthwise

Whipped cream

1 teaspoon orange extract

Make It

Line a 5x10 loaf pan with plastic wrap. Place chocolate in a heatproof bowl. Place yolks and a pinch of salt in another heatproof bowl.

Bring cream to a simmer in a medium saucepan. Slowly pour cream into bowl with yolks, whisking constantly; return mixture to saucepan, set over low heat. Cook, stirring constantly, until mixture is thick enough to coat the back of a wooden spoon, about 8 minutes. Immediately strain through a fine sieve set over chocolate; stir until chocolate melts and is smooth. Refrigerate, stirring occasionally, until thick, about 4 hours.

Spread 1 cup chocolate mixture evenly onto bottom of loaf pan. Top with a layer of 4 graham crackers, trimmed to fit. Spread 1/2 cup chocolate over top, and cover with some bananas. Spread 1/2 cup chocolate over bananas, and top with a layer of 4 trimmed graham crackers. Repeat with remaining chocolate, bananas and graham crackers until you reach the top of the pan; finish with graham crackers.

Cover with plastic wrap, and refrigerate overnight. Uncover, and turn out onto a serving platter. Remove plastic wrap. Garnish with whipped cream.

cobblerCherry Cobbler

What you need

3 3/4 cups all-purpose flower, plus more for rolling

4 teaspoons baking powder

1 1/2 teaspoons course salt

1 cup sugar

3/4 cup (1 1/2 sticks) very cold unsalted butter

2 cups cold heavy cream, plus more for brushing

3 pounds fresh cherries; pitted, or 2 1/4 pounds frozen cherries

4 teaspoons cornstarch

1 teaspoon pure vanilla extract

Make It

Preheat oven to 400 degrees. In a bowl, combine flour, baking powder, salt and 1/2 cup sugar. Using large holes on a box grater, grate butter into flour mixture. With a fork, stir in cream until dough just comes together. On a floured work surface, roll out dough to a 3/4-inch thickness with a floured rolling pin. With a knife or biscuit cutter, cut out 8-12 rounds or squares of dough.

In a bowl, combine cherries, remaining 1/2 cups sugar, the cornstarch, and vanilla. Divide mixture among four 1 1/2 cup ramekins; top each with 2-3 dough pieces. Brush tops with cream.

Bake cobblers on a rimmed baking sheet until biscuits are golden and juices are bubbling, 40-45 minutes, rotating sheet halfway through. Let cool 15 minutes. Serve warm or at room temperature.

pieIce Cream Snickers Pie

What you need

1 pint chocolate ice cream, softened

1 (9-inch) ready-to-fill Oreo cookie crust

3 tablespoons creamy peanut butter

1/2 cup caramel ice cream topping

1/2 cup salted peanuts

1/2 cup coarsely chopped Snickers Popables candy

2 pints Ben and Jerry's "In a Crunch" ice cream

Make It

Spread chocolate ice cream over bottom of cookie crust. Stir peanut butter into caramel topping. Drizzle 1/3 cup on ice cream; sprinkle with 1/4 cup each peanuts and chopped candy. Freeze until ice cream is firm.

Top with scoops of peanut butter ice cream. Stir 1-2 tsp. water into remaining topping mixture; drizzle over top. Sprinkle with remaining peanuts and candy. Freeze at least four hours.

About 20 minutes before serving: refrigerate pie to thaw slightly.
