Fun Food for St. Patrick's Day

It's easy being green on St. Patrick's Day. Especially when you can have fun with your food! Home Decor Expert Merri has given us some simple and great ways to incorporate the St. Patrick's Day color into mealtime.

Having your kids help you bring green to St. Patrick's Day can make the day that much more fun for the whole family! If you don't want to steer too far from the meal you had planned, just remember that a little food coloring goes a long way! Let your kids add the food coloring; they'll have so much fun making their food more colorful! Some of the best and easiest foods to add food coloring to include:

  • fun foodMashed potatoes; add about 5 drops to the finished product
  • Pancakes; add 2-4 drops to the batter
  • Cupcakes; add 2-4 drops to the batter or frosting
  • Milk; add 1-2 drops to a glass
  • Deviled eggs; add 2-4 drops to the yolk mixture
  • Scrambled eggs; add 2-4 drops to eggs before putting in pan - think Dr. Seuss


     

popcornGreen Candied Popcorn

What you need

4 quarts popped corn

1 1/2 cups sugar

1 1/2 cups light corn syrup

2 tablespoons butter

1/2 tsp. salt

1/4 tsp. vanilla

1 tsp. baking soda

Green food coloring

Make It

In heavy saucepan on medium heat, melt butter then add sugar, corn syrup and salt. Increase temperature to medium high and bring mixture to a boil, stirring constantly to dissolve sugar. Once mixture boils, add in food coloring and stop stirring.

Boil for 5 minutes (do not stir). Mixture should be about 250-260 degrees. Remove from heat and carefully stir in vanilla and baking soda. Working quickly, while mixture is foamy, pour mixture over popped corn and gently stir to coat popcorn.

Place popcorn with a large roaster or rimmed baking sheet (lined with parchment paper or sprayed with cooking spray) and bake at 200 degrees F for 1 hour, stirring every 15 minutes.

pieShamrock Key Lime Pie

What you need

5 egg yolks, beaten

1 (14 ounce) can sweetened condensed milk

1/2 cup key lime juice

1 (9 inch) prepared graham cracker crust

Green food coloring

1 kiwi, sliced

Wafer cookies

Make It

Preheat the oven to 375 degrees F.

Combine the egg yolks, sweetened condensed milk and lime juice. Mix well. Add food coloring, 2 drops at a time, until desired color is reached. Pour into unbaked cracker shell.

Bake in preheated oven for 15 minutes. Allow to cool. Decorate border of pie with wafer cookies. Place slices of kiwi in center to add another touch of green!

cupcakeLucky Green Velvet Cupcakes

What you need

3/4 cup vegetable oil

3/4 cup granulated sugar

1 egg

2 tsp. white vinegar

1 tsp. vanilla

1/2 tsp. green food coloring

1 1/4 cup all-purpose flour

1/2 tsp. baking soda

1/2 cup buttermilk

Yellow frosting

Green chewy candies

Make It

Preheat the oven to 350 degrees F. Place 10 paper liners into the cups of a muffin pan. In a large mixing bowl with an electric mixer, beat together the oil, sugar, egg, vinegar, vanilla and green food coloring until combined.

In a smaller bowl, stir together the flour and baking soda. Add to the egg mixture, in two or three additions alternating with the buttermilk, beating well after each.

Spoon the batter into the 10 paper liners, dividing the batter evenly among them. Bake for 20-25 minutes or until a toothpick comes out clean. Remove from pan and let cool thoroughly. Once cool, ice the cupcakes with the yellow frosting. Place a chewy candy on the top of each for the finishing touch.
